5 Desserts That Are Brimming with Summer Fruit

Dipping your hand into a container of raspberries, biting into a perfectly ripe peach, cutting a large slice of juicy watermelon: that’s summer! To celebrate the abundance of seasonal fruit, we’ve developed a few indulgent desserts overflowing with them, ready to be enjoyed on any and all occasions.

1. Peach Melba with Honey

Peaches, raspberry sauce and ice cream form the basis of traditional Peach Melba. This French recipe was created by legendary chef Auguste Escoffier, in honour of opera singer Nellie Melba, at the end of the 19th century. In our version, peaches are roasted in the oven and served with honey caramelized whipped cream to enhance the flavours. Served in a champagne glass, this dessert looks like a fancy sundae.

2. Nectarine and Apricot Crisp Pudding Cake

Halfway between pudding cake and crisp, this dessert is the ultimate summer comfort food. Both moist and crispy, thanks to the crumble made with brown sugar, flour and pecans, this is a highly satisfying hybrid. It also features seasonal apricots and nectarines, cooked on the stovetop to prevent spillage in the oven. Be sure to serve it with a big scoop of ice cream!

3. Raspberry Angel Food Cake with Cream Cheese Whipped Cream

This stunning angel food cake is like a gust of fresh air during a heatwave. Light and aerated, the dough is sprinkled with enough whole raspberries to have some present in every bite. Crushed raspberries are also incorporated into the fairly dense mixture of cream cheese and whipped cream. As a final touch, garnish the cake with a mound of raspberries.

4. Tres Leches Cake with Strawberries and Watermelon

This cold dessert will steal the show at dinnertime. The cake is infused with a triple milk syrup (milk, condensed milk and coconut milk) and coated with whipped cream as well as slices of strawberries, watermelon and pineapple. Leave it in the baking dish to transport it with ease.

5. Frozen Chocolate Pie with Blackberry Eton Mess

Inspired by the classic British dessert, this version of the Eton mess is a mix of whipped cream, meringue and berries. As the story goes, a boy from Eton College had accidentally sat on a pavlova. As it was in a basket, it broke into pieces, but still remained rather tasty. In our recipe, this scrumptious garnish tops a tart crust made with cookie crumbs and is served with chocolate ice cream. The final touch? A dollop of haskap berry compote.
