Inspired by a classic British dessert, this version of the Eton mess is a mix of whipped cream, meringue and berries. The story goes that a boy from Eton College accidentally sat on a pavlova. As it was in a basket, it may have been deconstructed, but remained very tasty. In our recipe, this scrumptious garnish tops a tart crust made with cookie crumbs and is served with chocolate ice cream. The final touch? A dollop of haskap berry compote.

Note from Ricardo

Haskap berries are now available in the frozen fruit aisle of most grocery stores. Bleu & Bon brand is available at IGA. They are also available fresh towards the end of June or beginning of July. The haskap berries can be replaced by the same quantity of blueberries. In this case, add 2 tbsp (30 ml) lemon juice to the compote.

Since the Eton mess contains crunchy meringues that will soften quickly once in contact with the whipped cream, the pie should be eaten as soon as it has been assembled. The pie cannot be refrozen once the toppings have been added.
