Monday: Piri Piri Tofu and Grilled Cauliflower with Dill Sauce

If you love the bold flavour of Portuguese chicken, then you’re sure to enjoy this meatless dish. The trick is how you cut the tofu; instead of using a knife, use your hands to tear the tofu into irregular pieces. It absorbs the seasonings better and the jagged edges promote a meat-like caramelization.

Tuesday: Quick Linguine and Clams

This simple pasta dish is made even simpler thanks to the use of canned clams. (On a busy weeknight, who even has the time to scrub and wash fresh ones?) Add a bit of white wine and a sprinkling of fresh herbs, and you’ve got a practically fancy meal on your hands.

Whether you prefer haddock or sole, use your favourite white fish for this punchy Mediterranean-style dish. Simply brown it in a frying pan and serve it with a sauce vierge: tomatoes, shallots, black olives and capers. It’s light, delicious and incredibly easy.

Friday: Pork Patties with Grilled Pineapple and Broccoli

Can you resist a meal that comes together in a flash? We sure can’t! This savoury pork topped with hoisin sauce pairs wonderfully with the sweetness of the grilled pineapple, and it rounds out to a complete meal with a side of broccoli and rice.
