1. Aperol sour
Both cocktail lovers, Brigitte and Ricardo have a real minibar filled with spirits, liqueurs and Quebec bitters in their RV. Here, Ricardo made an Aperol sour—a blend of gin, bitter orange liqueur, lemon juice, simple syrup and a cocktail emulsifier that creates a frothy texture. Best drunk as an aperitif, on a folding chair.

2. Seafood Platter
At the fish market, it’s impossible not to succumb to crab legs, lobster tails, cold-water shrimp and oysters. Choose what you like to make a superb platter. Brigitte likes to place them on a small tiered stand that can be dismantled, which she leaves in the RV. Serve with a spicy mayonnaise and an apple mignonette.

3. Shrimp and Scallop Risotto
There’s nothing better than enjoying freshly caught seafood, such as shrimp and scallops. This duo is used in this classic risotto, which also incorporates sour cream for an even creamier texture. Place the seafood as a garnish and enjoy while watching the sun set.

4. Omelette with Herbs and Asparagus
Take inspiration from finds at the local cheese shop to prepare a simple omelette that contains a good amount of herbs and asparagus. Cook it until slightly runny and garnish with cheese shavings. It’s perfect for a quick gourmet lunch.

5. One-Pot Gnocchi with Vegetables
After a day of driving, an uncomplicated dinner is always welcome. This gnocchi is prepared in a single pan, cooked along with vegetables, diced tomatoes and a little water. Add the finishing touch by sprinkling olives and fresh mozzarella on the dish.

6. Rustic Blueberry and Lemon Pie
There’s nothing Ricardo-proof, not even baking a pie in an RV. Before hitting the road, prepare the dough and freeze it until it’s time to roll it out. No need for a pan to make this rustic pie, just place it directly on a baking sheet and fold the edges over the filling.
