8 Cold Recipes for Hot Days

Eating hot food when the thermometer hits 30°C? Nope! These recipes speak of freshness, crunchiness, colour and, above all, seasonal food. You want light dishes that don’t require (too much) cooking? These recipes are perfect for moments when heat and the humidex factor start reaching for the high notes.

1. Beef and Yellow Beet Carpaccio

In this recipe, cook the beets in advance and serve them cold with the raw meat, carpaccio-style. Before cutting the beef into thin slices, freeze the tenderloin for at least 2 hours to make it easier to slice. Garnish the dish with julienned apple and green onions.

2. Mortadella Sandwiches with Pistachio Mayonnaise

Under the midday sun, a cold sandwich is better than a hot one. Prepare a homemade pistachio mayo and put together a generous and meaty sandwich, with lots of cheese and condiments, too. The addition of lemon-stuffed olives brings a lemony-salty flavour that evokes olive mortadella.

3. Cold Chickpea and Arugula Soup

Soup in the summer? Served cold, it’s a joy to eat! In this recipe, chickpeas and arugula are puréed in a broth with herbs and pieces of pita bread to bind it all. It’s better to make it a little bit in advance to allow the flavours to develop before you serve it. Use the oven for just a few minutes to grill the sesame and sumac pita bread included as a garnish.

4. Nordic Shrimp Lettuce Wraps

Bring a fresh take to the classic wrap by replacing the tortilla with Boston lettuce leaves slathered with curry-spiced sour cream. In addition to the Nordic shrimp, the garnish includes a nectarine slaw with crunchy cabbage, snow peas and julienned carrots. Everyone at the table is invited to assemble their own wrap with the toppings of their choice.

5. Tuna Tartare with Tropical Fruit

Take a detour to the tropics with this tartare, which includes mango and passion fruit. Keep the tuna on ice while you prep everything and enhance the mixture with a lightly spicy mayonnaise. A few kiwi slices and green herbs add freshness and acidity. A meal for two that can easily become an appetizer for four.

6. Black Lentil and Cherry Tomato Salad

To make the most of your summer activities, make a colourful lentil and tomato salad. We chose black beluga lentils, a legume with a subtle earthy taste reminiscent of hazelnuts. Cook the lentils and make the green vinaigrette in advance, choosing a cooler moment in the day to use the stove. It’ll also save time when you put it together.

7. Honeydew and Cucumber Salad

Don’t forget to hydrate during heat waves! To make it easier, choose fruits and vegetables that contain a lot of water, such as the cucumber and melon used in this salad. Give it some crunch with pistachio and count on mint to bring a refreshing taste. Perfect for an appetizer or side dish.

8. Pineapple and Basil Popsicles

With a frozen treat, it becomes easier to deal with the scorching heat. In this recipe, pineapple and basil come together for a flavour like no other. Dice the fruit and set some pieces aside to create texture in the popsicle. Purée the rest with the basil and a light syrup. There’s nothing better for a summer snack!
