6 Tasty Frozen Desserts for Summer

Skip the ice cream shop this week for a taste of freshness right at home. Take this opportunity to break out the ice cream maker and make some extra room in the freezer. We’ve got sorbets, mochi and other frozen desserts that pair well with swimming, sunburns and late nights spent in the backyard. It’s a gentle cold that’ll surely revive you during the summer heat.

Introducing an impressive combination of ice cream sandwich and chocolate chip cookie, family-sized, no less! Given most cookies made with butter tend to harden in the freezer, we replaced it here with a magic ingredient: mayonnaise. Yes! The latter ensures a soft and chewy cookie, and it remains as such even when frozen. It’s a joy both to eat and to share.

5. Lemon Meringue Pie Paletas

Our chef Isabelle Deschamps Plante first found out about paletas during her travels to Mexico. In this recipe, we’ve given these ice pops a bright lemony flavour and added graham cracker crumbs, a nod to lemon pie. Once frozen, they’re topped with a Swiss meringue, denser and more stable than a French meringue, which is treated like marshmallow.

6. Honey and Elderflower Slushies

The hotter it gets, the more our desire for a thirst-quenching drink increases. In this slushie recipe, the trio of honeydew, cucumber and elderflower syrup go hand in hand, bringing a fresh and grassy side to the drink.
