5 Tangy Dessert Recipes for Summer

Some people have a sweet tooth, whereas others prefer more salty flavours. And then there are those who love all things tart and tangy. We’ve developed these desserts for fans of lemon, rhubarb and other mouthwatering ingredients. Featuring colourful fruits from near and far, these recipes definitely taste like summer.

1. Mont Blanc Cherry Slush

This icy summer treat from our childhood certainly awakens nostalgia in all of us. Prepare the cherry juice by adding a healthy amount of lemon juice, which you’ll then run through an ice cream maker to make a slushie. Divide the mixture among glasses and top with a nice scoop of ice cream. Enjoy with a long straw, a spoon and squinty eyes.

2. Lemon and Basil Poke Cake

Poke cakes are a fun and flavourful dessert. Once your cake is out of the oven, poke several holes in the cake before pouring a lemon cream all over it, so that it seeps through. For even more freshness, be sure to spread the cake with basil-flavoured whipped cream.

3. Paloma Popsicles (Tequila and Grapefruit)

Want to make a toast with an ice pop? There’s nothing better on a gorgeous sunny day. These are inspired by the Paloma, a popular cocktail consisting of grapefruit juice, lime juice and tequila. Freeze them in ice pop moulds and enjoy underneath a parasol.

4. Rhubarb Bostock

Rhubarb is great for making a lightly sweet compote, which you can add to plain yogurt or to top a bostock. This pastry of French origin features a slice of brioche bread brushed with maple syrup and topped with an egg and marzipan mixture. Just a few minutes in the oven and you’ve got something delicious.

5. Sea Buckthorn Meringue Pie

When cooking with local ingredients, it can sometimes be a challenge to replace the likes of lemon or lime in a recipe. But the sea buckthorn, a small and very tart orange berry that deserves a bit more recognition, can do the job and do it well. In this dessert, you can use it like you would a lemon meringue pie, by simply replacing the lemon juice with homemade sea buckthorn juice. It’s a quick and easy version, no less!
