Monday: Meal-Sized Grilled Asparagus and Silken Tofu Salad
To start the week off right, take silken tofu out of its usual recipes with a meal-sized salad. It’s served raw, as a garnish for roasted vegetables. The salad is enhanced with a vibrant vinaigrette made with chives, pumpkin seeds, black olives and lemon zest for freshness all-around!
Tuesday: Sweet Potato and Bell Pepper Frittata
When you want to simplify dinner (without spending too much), eggs always come to the rescue. Here, sweet potato and cubed pepper are cooked on a baking sheet and then mixed in with the eggs and cheese and cooked in a pan in the oven. The frittata comes out golden brown and all that’s left is to garnish it with cilantro and avocado.
Wednesday: Chicken with Chickpeas and Crispy Pita (Fatteh)
This recipe is inspired by fatteh, an Egyptian and Middle Eastern dish that is made with flatbread, yogurt and mint as well as legumes or meat. Here, we combined chicken with chickpeas that are grilled in a pan. Cut the pitas into small squares and brown them for a super crispy texture. It’s a simple meal that will take you on a journey to help break up the week.
Thursday: Spaghettini with Cod and Green Beans
Beans, onions, olives and cod—this dish has it all! And in terms of taste, everything is amped up with tomato paste, paprika and chili flakes for a great colourful and flavourful dinner option.
Friday: Barbecue Pork Sandwiches
At the end of the week, everyone wants dinner to be simple. That’s why we turn to a sandwich filled with pork tenderloin (an economical meat option!) and vegetables roasted on the BBQ. We also toast the bread for a meal made entirely on the grill in nearly 30 minutes.
