The flavour of buckwheat flour pairs perfectly with pear and caramel. It can be replaced here with the same quantity of graham cracker crumbs.

Sweet clover extract is our northern vanilla! It has an aroma similar to vanilla, with additional notes of almond, praline and hay. You can find it in gourmet food shops.

If you only have one pastry bag, set the pear purée aside in an airtight container. Once you have piped out the whipped cream, wash out the pastry bag and use it with a small plain tip to decorate the cake with the pear purée.
