Caramelized Onions
2 onions, thinly sliced
3 tbsp butter
1 tbsp (15 ml) cider vinegar
Honey Mustard Spread
2 tbsp (30 ml) Dijon mustard
1 tbsp (15 ml) whole-grain mustard
1 tbsp (15 ml) honey
1 pinch ground turmeric
Sandwiches
1 baguette bread
1/2 lb (225 g) sharp cheddar cheese, sliced or grated
8 slices bacon, cooked crisp
1 green onion, thinly sliced
1 tbsp (15 ml) olive oil
Preparation
Caramelized Onions
In a skillet over low heat, brown the onions in the butter until caramelized, about 10 to 15 minutes. Add the vinegar. Cook for 2 minutes, stirring constantly. Season with salt and pepper. Set aside.
Honey Mustard Spread
In a bowl, combine all of the ingredients. Set aside.
Sandwiches
With a bread knife, cut the baguette into four sections. Slice each section in half horizontally.
Spread the inside of the bread with a thin layer of the honey mustard spread. Fill each sandwich with caramelized onions, cheese, two slices of bacon, and green onion. Close up the sandwiches.
In a large skillet over medium heat, brown the sandwiches on both sides in the oil. Using a spatula, press the sandwiches and cook until the cheese has melted.
