Lamb Chops with Mint Gremolata

Mint Gremolata
1 garlic clove, finely chopped
1 lemon, zest finely grated
1/4 cup (10 g) fresh mint leaves, finely chopped
Lamb Chops
2 tbsp (30 ml) olive oil
1 tsp sweet paprika
6 lamb chops, about 1-inch (2.5 cm) thick
Preparation
Mint Gremolata
In a bowl, combine all of the ingredients. Set aside.
Lamb Chops
Preheat the grill, setting the burners to high, or preheat a grill pan. Oil the grate or the pan.
In a large bowl, combine the oil and paprika. Add the chops. Season with salt and pepper and coat well in the marinade.
Grill the chops for 3 minutes on each side or until the desired doneness.
Divide the chops among 2 plates. Garnish with the gremolata
